Banana Pancakes... YUM!

Last night I was thumbing through my children's cook books...

First of all, I use the children's cookbooks because they're easy to make, they usually take less than 30 minutes to cook, and they're FUN!

Okay, okay... the truth is that I'm no chef.

Anyway, I found a recipe for B-A-N-A-N-A, Banana Pancakes (that was fun! You know the song...) from my Family Fun recipe book by Disney.

So second, you need to know that come 2 o'clock, I ask my self "Did I eat anything this morning? Oops! I forgot!" Maybe that's why my baby's starving from milk failure.

In any case, I decided that I need to schedule breakfast and lunch so I can produce more milk, so I thought it would be a tasty Sunday breakfast... well, I kind of napped through breakfast, so I had it for lunch.

It was a little harder than I had planned because to start with, I'm so impatient I don't follow recipes very well. I just want to get it made NOW!!!

I didn't have self rising flour and I thought I could make it with regular flour (that's what I usually do, improvise), but that word rising seemed important, so I decided there had to be a basic pancake recipe somewhere in my kitchen that would make my pancakes rise and I found one in my Better Homes Bridal Edition Cookbook... of course it was a buttermilk recipe, so that was no good because I didn't have "buttermilk"/sourmilk, etc. Finally, I found directions below for a regular recipe. So the point I'm getting to is this... it called for SUGAR!

Not a lot of sugar, but I decided that I could "improvise" something that would be healthier than sugar. That took me to my "Cookin' with Home Storage" recipe book. In the back it has a substitution list and I found that honey substitutes very well (Hmmm, just like in herbal tea!). So I made the substitution, used whole wheat AND olive oil, and added 3 mashed B-A-N-A-N-A-S, BANANAS!

So, I had some healthy pancakes, burned some energy running around looking for this, that, and the other. WOW, I felt great!

Then I added syrup and butter...OOPS!

Here is the final recipe from 3 different cookbooks and my own imagination, THEY REALLY ARE GREAT! I asked my husband what he thought as he look at them and was about to take a bite...

"These are Whole Wheat, arn't they (with sour face)?"

"JUST TRY THEM!"

(BITE)

"Hmmm, they're okay."

S-U-C-C-E-S-S!


BANANA PANCAKES
1 C. WHOLE WHEAT FLOUR
2 T. HONEY (MORE THAN REALLY IS NECESSAR, BUT I LOVE IT!)
2 t. BAKING POWDER
1/4 t. SALT (COULDN'T FIND A SUB, PROBABLY DIDN'T NEED IT ANYWAY)
1 BEATEN EGG
1 C. MILK
2 T. COOKING OIL (I USED OLIVE)
3 SMALL MASHED B-A-N-A-N-A-S, BANANAS

When you spell B-A-N-A-N-A-S are you referring to the Gwen Stefani song? Because now it's blaring in my head and I'm afraid I may not be sleeping tonight! :)

I need to listen to the song. How funny we are all on right now.
These sound very yummy and I will have to try them. Christy self rising flour is just flour with some baking powder or soda in it, I will have to look for the substitution. Also You don't have to put the sugar in, you can just leave it out and it won't change it at all. For an easy sub for buttermilk, just take 1 cup milk and add 1 tablespoon vinegar or lemon juice to it and let it sit for a minute, and you have a great substitute.
I found that you can get nice fluffy pancakes with whole wheat flour if you just let the batter sit for a few minutes to let the flour soak the liquid up. I will have to post more on my other blog, and you will have to post the recipe there.

Thanks Sharee, I figured the flower/baking powder thing out as I was making those pancakes...

This Mommy/Homemaking thing is hard!

Oh, it sounds like they are very yummy and I'll have to try them. I don't know that BANANA song. I'm going to have to hear it!
